2 mashed bananas
4 Tablespoons of Oil (I used groundnut but oil of choice)
1 beaten egg
125ml of milk
200g of Self Raising Flour
1/4 teaspoon of cinnamon or mixes spice
Heat oven to Gas Mark 5. Place sugar in a bowl with the mashed bananas. Stir in the oil, beaten egg and milk. Slowly stir in the flour and spices. Divide between 12 muffin cases and cook for about 20 - 25 minutes.
